Shrimp and scallop shiu mai Dumplings.

I know you must be wondering where shiu mai came from. But these delicious tiny purse-shape Chinese dumplings,make the perfect party food and dinner since they can be made in large batch,frozen and them steamed before guests arrive.

I learnt this recipe a long time ago when i was on tour in china and when i tasted these......i almost melted because i just couldn't believe how well it tasted.


 I remember that,after i had  those hunger-satisfying dumplings,i went right straight to bed,plus i had a very nice dream that night.

To make these dumplings all you need is fresh sea scallops,peeled shrimps and some other basic ingredients.

You can also try taking these dumplings along with some great chicken parmesan soup or together with a very refreshing shining-yellow mango lemonade.

Equipment.

  • 1 Large bowl.
  • Food processor.
  • Knife.
  • Baking sheet.
  • Parchment paper.
Ingredients.
  • ½lb of fresh sea scallops;with tough muscle removed from it.
  • ½lb of shrimp.
  • 1 cup of sliced nepa cabbage.
  • ½ Cup of chopped scallions both white and green parts.
  • ¼ Cup of fresh chopped cilantro.
  • 1 teaspoon of soy sauce.
  • 1 Teaspoon od chopped garlic.
  • 1 Teaspoon of rice vinegar.
  • 1 teaspoon of cornstarch.
  • 2 Tablespoon of chopped ginger.
  • 1 Tablespoon of sesame oil.
  • 1 Tablespoon of granulated sugar.
  • ½ Tablespoon of black pepper.
  • 1 Large egg.
  • 50-60 Wraps of shiu mai or wanton wrappers.
  • Soy dipping sauce.
Directions.
  • Pour the shrimp and scallops in a food processor and blend it all out till it's almost smooth,transfer it into a large bowl and add the soy sauce,cilantro,scallions,garlic,rice vinegar,sesame oil,cornstarch,pepper,egg white,sugar and ginger.
  • On a rimmed baking sheet,sprinkle cornstarch. Place the shiu mai wrappers so that its flat on a surface,trim wrappers so that it suits your preferred size.
  • In each wrapper,place a plentiful amount of pork filling in the center,with your hands or brush sprinkle a little water around the edges of the wrapper to keep moist.
  • crimp the wrapper up by squeezing both edges together slightly so that it looks like a pouch.
  • Place filled wrapper on the cornstarch coated baking sheets and cover with a plastic wrap. Repeat this same process for the rest of the wrappers.
  • For cooking; Set up a steamer with about 3-inches of water at the bottom. In a basket fill up with cabbage leaves and arrange the shia mai so that they dont touch each other. Place the basket in the steamer and cover.
  • Remove the lid covering steamer when you start to see steam escape from the dumplings. Steam dumplings until the pork is cooked through. 
  • For serving; you can serve dumplings along with some soy dipping sauce or rainbow yogurt bite.
Recipe Note.
  • The pork filling can be prepared as per choice, you can decide to try out any other fillings of your choice. these fillings where made from mixing shrimp,scallops together with some other ingredients as in the first step above.
